SHRIMP AND GNOCCHI WITH GARLIC PARMESAN CREAM SAUCE

A light, airy gnocchi with tender shrimp in the creamiest sauce you will ever drink!

You don’t need me to convince you about a cream sauce with garlic and Parmesan.

Do your emergency shopping. You will need DeLallo Gnocchi, fresh shrimp, and lots of Parmesan.

Serve it in the skillet because we cannot waste any of this cream sauce. We can’t.

I wouldn’t say I like thyme/basil. WHAT CAN I USE INSTEAD OF THYME/BASIL?

Absolutely! You can use fresh or dried rosemary or oregano. You can use any herb you like. Dry herbs are more concentrated and potent than fresh herbs, so that you will need less. It is best to use one teaspoon of dried herbs for every one tablespoon of fresh herbs.

What is half and a Half?

Half-and-half is equal parts whole milk and heavy cream. You can substitute 3/4 cup of whole milk and 1/4 cup heavy, rich cream for 1 cup of half-and-half or 2/3 cup low fat/skim milk plus 1/3 cup heavy, heavy cream.

Ingredients

  • One 16-ounce package DeLallo Potato Gnocchi
  • Two tablespoons of unsalted butter
  • Peeled and deveined 1 pound medium Shrimp
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • Fresh parsley leaves, two tablespoons

GARLIC PARMESAN CREAM CREAM

  • 1/4 cup Unsalted Butter
  • Four cloves garlic, minced
  • 2 Tablespoons of all-purpose flour
  • As needed, add up to 1 cup of chicken broth
  • Thyme dried one teaspoon
  • Half a teaspoon of dried basil
  • Half and half is a cup of half-and-half
  • Half a cup of freshly grated Parmesan
  • To taste, add Kosher Salt and freshly ground Black Pepper

Instructions

  • Cook gnocchi in a large pot with boiling salted water according to the package directions. Drain well.
  • Melt butter over medium-high heat in a large skillet. Add salt and pepper to taste. Stir occasionally while cooking until pink, approximately 2-3 minutes. Set aside.
  • Melt butter in a skillet on medium heat. Stirring frequently, add the garlic, and cook until fragrant (about 1-2 minutes). Stir in flour for about a minute until it is lightly browned.
  • Whisk in the chicken broth, basil, and thyme. Cook while whisking continuously until the mixture is incorporated. This should take about 1-2 minutes. Stir in the half-and-half and Parmesan until it is slightly thickened (about 1-2 minutes). Add more half-and-half if the mixture becomes too thick. Season with salt and pepper to taste.
  • Add shrimp and gnocchi and toss gently.
  • Garnish with parsley if you wish.
