I did it!
It was a long journey.
It’s so beautiful here.
I went from 30 to 80 degrees F.
The summer months are definitely my favorite.
With a view of Table Mountain, I might never want to leave.
This grilled cheese is the only exception.
This sammie is a waffled, green-loaded, cheesilicious snack.
Ingredients
- Olive oil two tablespoons
- Three cloves garlic, minced
- Take one bunch of kale and chop the leaves.
- Eight slices of whole-wheat bread
- Avocados: 2 avocados, halved, seeded. Peeled. and sliced
- 1 cup shredded mozzarella cheese
- 1/4 cup pesto – homemade or bought
Instructions
- Heat olive oil in a large skillet. Stirring frequently, add the garlic to the pan, and cook for about a minute. Stir in the kale for 3-4 minutes until it is bright green and wilted. Set aside.
- Preheat a waffle maker to medium heat. Waffle irons can be lightly oiled on the top and bottom or coated with nonstick spray.
- Place the bread slices in the waffle iron in batches. Add kale and avocado. Top with remaining bread slices.
- Close gently and cook for 3-4 minutes until golden brown.
- Serve immediately
