Ingredients
- Olive oil one tablespoon
- 1 pound of ground beef*
- Taco seasoning, one package (1.2 ounces)
- 1 1/2 cups shredded cheddar cheese
- 2 Roma tomatoes, diced
- At room temperature, four tablespoons of unsalted butter
- Eight slices of whole-wheat bread
Instructions
- Heat olive oil in a large skillet on medium-high heat. Cook the ground beef until it has browned (about 3-5 minutes), crumbling the meat as you cook. Stir in taco seasoning. Drain any excess fat.
- Add cheese and tomatoes, stirring until cheese is melted.
- Spread butter with a butterknife on the buttery side of each bread slice. Place four pieces buttered-side down on the work surface. Distribute the ground beef mixture equally on all parts. Add remaining pieces buttered-side up.
- Heat the skillet on low heat. Cover the sandwiches with a lid and cook them, turning them once using a spatula until they are golden brown.
- Slice and serve right away.
