Chipotle Hummus Sandwiches with Smoky Tempeh bacon

What about a smoky or spicy sandwich? Or a satisfying vegan-based sandwich? We’re in! This easy is packed with flavor, protein, and fiber thanks to spicy hummus and smoky bacon.

This is perfect for meal preparation or whenever you want something savory and comforting and to stay full and satisfied. Only seven ingredients and just 15 minutes are required. We’ll show you exactly how to do it!

What’s in this Sandwich?

This sandwich is similar to a BLT but with extra veggies and spicy chipotle-hummus.

  • Chipotle Hummus is spicy, smoky, and great for spreading on bread.
  • Tempeh bacon is a delicious, smoky, plant-based substitute for bacon made with fiber-rich, protein-rich soybeans.
  • The cucumber is crisp, crunchy, and hydrating. It’s also a great source of potassium, vitamin C, and vitamin K.
  • Alfalfa sprouts — fresh, crisp, and the perfect sandwich partner (and better than lettuce, you’ll find out when you try them).
  • Tomato is sweet, juicy, and packed with vitamin C and antioxidants
  • Avocado- Rich, creamy, and full of healthy fats that will keep you satisfied

Ingredients

  • Use store-bought hummus or 3-4 tablespoons of Chipotle hummus
  • Three slices tempeh Bacon or Lightlife.

  • Cucumber slices 6
  • Fresh tomato slices – 1-2 slices
  • Three pieces of ripe avocado
  • 1/4 cup of alfalfa seeds (or other sub-greens)

Instructions

  • Prepare tempeh Bacon and homemade hummus first. You can make them up to three or four days ahead. If you prefer, you can use tempeh bacon that is already cooked and follow the package instructions.
  • Toast the bread (if desired), and then slice up your sandwich toppings.
  • Spread the chipotle-hummus on a slice of bread and then layer cucumber, tempeh bacon (in this order), sprouts, tomatoes, avocados, and the remaining portion of toast. Enjoy!
  • The hummus is best when it’s fresh. However, the tempeh bacon and hummus can be stored separately in a refrigerator for up to 3-4 days. You can then assemble your sandwiches for a quick lunch on a weekday!
