Crispy Black Bean Tacos With Cilantro Lime Sauce

These tacos are made with a filling of black beans, fresh salsa, and other seasonings. They’re served in a crispy golden tortilla along with a creamy and cool cilantro lime sauce. YUM!

What’s in these Black Bean Tacos?

This is my favorite recipe for many reasons. Aside from obvious ones (golden crisp tortilla, satisfying black bean filling with a cool, creamy dip sauce), it’s easy. It’s stupidly easy. It doesn’t get easier than this.

  • Tortillas
  • Black Beans
  • Salsa
  • Taco Seasoning

That’s it! If you’re feeling extra, you can dip the chicken in a creamy lime cilantro sauce.

Remember when we told you that the SOS recipes are not pretentious? Remember when we said that the SOS recipes were not superior? This moment has arrived.

Can I Put Extras In My Black Bean Tacos?

You can always go beyond the standard. Wouldn’t it be nice to add a few pieces of Mexican cheese to the little crispy black beans? It would. It would be just as good with some vegetables and fajitas. Roasted chicken would also work. It is possible to make the cilantro lime dipping, and I have included all the instructions for you. It will only take five minutes.

If you don’t have enough of… anything (and I can tell you that I live in that house, so I know), you can skip adding the extras. The black bean filling tastes great as is, and that’s the way I always eat them! Simply plain.

Suppose you are pressed for time; instead of using the cilantro lime sauce, mix in some taco seasoning with a small bowl of sour cream. This “seasoned sour cream” is a hit with my family.

You can freeze these black bean tacos

I’m happy to announce that you can freeze these.

I made a double batch of black bean tacos and froze them in a bag. When you are ready to eat, fry those babies, and you will have a quick, easy, and delicious lunch, dinner, or snack. This is how I want to live.

Ingredients

Cilantro Lime Sauce:

  •  1/4 cup avocado Oil
  •  1/4 cup Water
  •  1/2 cup Green onions, chopped
  •  1/2 cup cilantro leaves
  •  Two cloves garlic
  •  1/2 teaspoon Salt
  •  Juice of the day: 2 Limes
  •  1/2 cup sour cream. Substitute avocado for a dairy-free / vegan version

Instructions

All ingredients for the cilantro lime sauce should be blended until they are smooth. Set aside.

Blend the salsa, beans, and taco seasoning in a food processor. Add a little oil to a skillet and cook the mixture long enough to bring out the flavors in the onions and garlic. It’s fine to cook the salsa for about 5 minutes.

Spread a few teaspoons of the black bean filling onto a flour tortilla. Fold the tortilla in half. Repeat this process until all the filling has been used (about 6-8 Tacos).

In a skillet, heat some butter or oil over medium-high heat. Fry in a pan over medium heat until golden and crispy. Dip in cilantro lime sauce. Serve with salsa, chips, and a margarita for mid-week. You’re welcome.
