KALE PESTO AVOCADO GILLED CHEESE

This dish is hearty, cheesy, and nutritious, with lots of greens. This dish is great for lunch or dinner!

This week has been a blur. From Denmark to Sweden, to Germany…

Then, 20 hours later…

I did it!

It was a long journey.

It’s so beautiful here.

I went from 30 to 80 degrees F.

The summer months are definitely my favorite.

With a view of Table Mountain, I might never want to leave.

This grilled cheese is the only exception.

This sammie is a waffled, green-loaded, cheesilicious snack.

Ingredients

  • Olive oil two tablespoons
  • Three cloves garlic, minced
  • Take one bunch of kale and chop the leaves.
  • Eight slices of whole-wheat bread
  • Avocados: 2 avocados, halved, seeded. Peeled. and sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pesto – homemade or bought

Instructions

  • Heat olive oil in a large skillet. Stirring frequently, add the garlic to the pan, and cook for about a minute. Stir in the kale for 3-4 minutes until it is bright green and wilted. Set aside.
  • Preheat a waffle maker to medium heat. Waffle irons can be lightly oiled on the top and bottom or coated with nonstick spray.
  • Place the bread slices in the waffle iron in batches. Add kale and avocado. Top with remaining bread slices.
  • Close gently and cook for 3-4 minutes until golden brown.
  • Serve immediately
